The Preserving Jar

 

The freshness of groceries has always been of great importance. It is essential to keep our food from the oxygen in order to prevent it from oxidising and from germs to grow.

If food is preserved, it is heated and bacteria are killed. The actual preserving is done in a glass, where a high pressure is built up. Upon falling temperature, the volume of the enclosed air decreases without air being resupplied from the outside. Thus, a vacuum is built in the closed jar. Food preserved in this way may be stored up to a couple of years.
